Directions for Seasoning Bulk Sausage
Bulk sausage is ground meat that has yet to be stuffed into casing. You can buy bulk sausage, which looks like ground meat, or make your own by grinding meat at home. Although many varieties of bulk sausage come preseasoned, you can create your own breakfast and dinner sausages by adding spices to plain bulk sausage. Things You'll Need
- Bulk sausage
- Salt
- White pepper
- Sage
- Thyme
- Ginger
- Allspice
- Cayenne pepper
- Black pepper
- Fennel seeds
- Fresh parsley
- Measuring spoons
Instructions

Breakfast Sausage

Buy or grind 5 lbs. of bulk sausage.

Add 2 1/2 tbsp. of of kosher salt and 1 1/2 tsp. of white pepper to the sausage.

Add 1 tbsp. of sage, 1/2 tsp. of ginger, 1 1/2 tsp. of thyme, 1 /12 tsp. of nutmeg and 1 1/4 tsp. of cayenne red pepper. Stir the spices well into the meat, distributing them evenly.

Add 1 cup of ice water to the meat and mix well. Make bulk sausage into the patties and refrigerate until you are ready to cook it.
Sweet Italian Sausage

Grind up or buy 1 lb. of bulk sausage.

Add 1/2 tbsp. of coarse salt and a 1/4 tbsp. of ground black pepper.

Add 1/4 tbsp. of fennel seeds and 1/2 tbsp. of fresh chopped parsley.

Mix all ingredients well. Stuff into sausage casings or make into patties. Refrigerate until you are ready to use.
