Fish is versatile and can be cooked by a variety of different methods such as baking, steaming and frying. However, one of the best ways to cook grouper is to grill it. Most fish flakes and falls apart on the grill, but grouper has a firm texture that holds it together throughout the grilling process making it an ideal fish for grilling. Things You'll Need

  • Four grouper filets (6 to 7 ounces)
  • Juice and zest from two tangerines
  • 2 Tbsp. dry white wine
  • 3 Tbsp. extra virgin olive oil
  • 1 tsp. fresh rosemary
  • 1/2 tsp. fresh thyme
  • 1/4 tsp. course ground black pepper
  • Vegetable oil
  • 2 Tbsp. minced scallions
  • 2 Tbsp. red bell peppers (diced)
  • Fresh herbs to garnish
  • Large bowl
  • Grill
  • Grill brush
  • Towel
  • Basting brush

Instructions

      Zest two tangerines and then cut them up really fine and place into a large bowl.

      Add 2 Tbsp. dry white wine, 3 Tbsp. extra virgin olive oil, 1 tsp. fresh rosemary, 1/2 tsp. fresh thyme, 1/4 tsp. course ground black pepper, 2 Tbsp. minced scallions, and 2 Tbsp. diced red bell peppers to the tangerine mixture. Mix the ingredients thoroughly together.

      Place the grouper fillets into the marinade and set aside for two hours.

      Scrape off any burnt material stuck to your grill using a grill brush.

      Pour some vegetable oil onto a towel and rub it over the grill to season it.

      Preheat your grill for about five minutes on high heat.

      Reduce the heat to medium.

      Place the grouper fillets onto the grill to cook.

      Baste the fillets every few minutes with a basting brush and the leftover marinade.

      Allow the grouper to cook for approximately 4 to 5 minutes on each side and then remove from the grill.

Tips & Warnings

  • You can substitute different herbs and fruits to make a marinade suited specifically to your own tastes.

  • The internal temperature of the grouper must reach 145 degrees to be considered cooked.
