How to Cut Off Brisket Flaps
Brisket is a cut of beef taken from the lower chest of the cow. Brisket is a tough meat with a lot of fat. For brisket meat to become tender enough to eat, it must be cooked for a long time. When cooking a brisket, many people remove the flap. The flap is a long piece of fatty meat connected to the underside of the brisket. Place the cutting board on a hard, flat surface.

Lay the uncooked brisket on the cutting board with the fatty side down. Grasp the flap, holding it taut in your hand.

Hold the kitchen knife at a 45-degree angle, placing the knife as close to the brisket meat as possible. Cut the flap away, using firm pressure and a back-and-forth sawing motion. Work from one end of the flap to the other, cutting away from yourself.

Discard the flap or prepare according to your favorite recipe.
