Things You'll Need

  • Medium nonstick saucepan
  • Olive oil
  • 1 red pepper, chopped
  • 2 sliced green onions
  • 2 tbsp. Thai red curry paste
  • 1 cup unsweetened coconut milk
  • Juice of 1 lime
  • Wooden spoon
  • 1 tbsp. fresh chopped mint
  • 2 tbsp. fresh chopped cilantro
  • 1 lb. peeled and deveined jumbo shrimp

      Cover the bottom of a medium nonstick saucepan with olive oil and warm it over medium-high heat. Saute red pepper and green onions in the oil until soft.

      Reduce the heat to medium. Add curry paste to the pan and heat until fragrant. Pour coconut milk and lime juice into the pan and blend all of the ingredients with a wooden spoon. Simmer the mixture for 10 minutes or until it is thick.

      Sprinkle mint and cilantro into the pan and blend. Add jumbo shrimp and adjust the heat to medium-high. Cook the shrimp, stirring frequently, for about 5 minutes or until they are cooked through.
