According to the American Gas Association, professional chefs and seasoned home cooks appreciate the even heat and the ability to instantly control the temperature as they cook. Instructions

      Fill the pot with the desired amount of water and place it on the burner. (reference 2)

      Turn the control knob for the correct burner until it reaches the "light" position. Most modern gas stoves include an internal electric ignition that lights the burner, but if you are working with an older stove, light a match, turn on the knob and quickly touch the match to the burner. As soon as the burner flames, pull the match away to avoid betting burned.

      Adjust the control knob to the "HI" position to boil the water, but depending on the size of your pot, you might need to adjust the flame size by turning the knob so it spreads evenly along the bottom but doesn't flame up around the side of the pot.

      Turn off the burner or reduce the heat as soon as it begins to boil so the water does not boil over.
