How to Cook a Pork Loin in Chicken Broth
Pork loin is a thick cut, taken from the area above the ribcage on a pig. While pork loin is expensive, the cut is lean and boneless, resulting in little to no waste. Things You'll Need
- 4 lb. pork loin roast
- Large skillet
- Slow cooker
- 4 tbsp. diced garlic
- 1 tsp. salt
- 1 tsp. ground black pepper
- 1 tsp. ground sage
- 1 tsp. ground thyme
- Small bowl
- 1 1/4 cups chicken broth
- 1/4 cup water
- Saucepan
- 1/4 cup flour
- Spoon

Brown all sides of a 4 lb. pork roast in a large skillet over medium heat. Remove the roast from the skillet and set it into a slow cooker.

Combine 4 tbsp. diced garlic, 1 tsp. salt, 1 tsp. ground black pepper, 1 tsp. ground sage and 1 tsp. ground thyme in a small bowl. Mix with your fingers and rub over all sides of the roast.

Add 1 1/4 cups chicken broth to the slow cooker and cover. Cook on high heat for five to six hours or on low heat for 10 to 12 hours.

Simmer 1/4 cup water in a saucepan. Add 1/4 cup flour and stir with a spoon until dissolved. Remove from heat and set aside.

Remove the loin from the slow cooker. Pour the liquid from the slow cooker into the saucepan. Stir and simmer over low heat to form a thick sauce. Serve the pork loin while hot with the sauce drizzled over the top.

Serve leftover pork loin in sandwiches or reheat in the microwave covered with a damp paper towel.
