How to Stuff Chicken Breasts


Stuffed chicken breasts with a taste of Mexico will spice up any meal. Taco bacon-flavored chicken breasts with cheese will please the palate. This tasty stuffed chicken recipe takes about 20 minutes to prepare and 40 minutes to cook, and is a tasty alternative to plain chicken breasts.

Things You'll Need

  • Non-stick spray
  • 1 egg
  • 1/2 cup milk
  • 1 package taco seasoning
  • 1/2 sleeve Ritz crackers, crushed
  • Plastic bag
  • 4 to 6 boneless skinless chicken breasts
  • 4 to 6 pieces of bacon
  • 4 to 6 slices American cheese singles
  • Olive oil in spray bottle
  • Spray muffin tin with non-stick spray. Preheat oven to 350 degrees Fahrenheit.

  • Place the milk and egg in a medium-size bowl. Use a wire whisk to mix together. Set aside.

  • Place the crushed Ritz crackers and taco seasoning in a medium bowl. Stir with a spoon to mix and set aside.

  • Place the chicken breasts in plastic bag. Use a tenderizer mallet to pound the breasts flat, so that each piece is about 1/4 inch thick. Remove the chicken breasts from the plastic bag and place on a clean counter.

  • Place one slice of cheese on each chicken breast. Cut one piece of bacon into 1-inch strips for each breast and place on top of the cheese.

  • Bring the edges of the chicken upwards to form a ball. Dip the chicken ball into the egg mixture. Roll the ball in the cracker mixture.

  • Place the open end of the chicken breast in the bottom of the muffin pan. Spray the top of the chicken ball with olive oil.

  • Place muffin pan in preheated oven to bake. Remove after 30 minutes and spray the top of the chicken balls with olive oil again. Return to oven and bake an additional 10 minutes.

  • Remove the chicken breasts and place in a casserole dish and serve.
