When you have bananas that are starting to turn brown, make oatmeal and banana muffins out of them. The recipe is simple to make even for someone who does not bake often. Oatmeal and banana muffins taste great and are also healthy. Your children will enjoy these muffins as well.   • Medium bowl

  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup oatmeal
  • 1/2 cup white sugar
  • Large bowl
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/3 cup vegetable oil
  • 3/4 cup milk
  • 1 cup mashed bananas
  • Muffin pan
  • Muffin baking liners

      Mix all of the dry ingredients in a medium size bowl until they are stirred completely. This includes baking powder, baking soda, flour, salt, oatmeal and sugar.

      Beat the egg in a large bowl. Add the vanilla, oil and milk into the bowl. Stir it all together. Put your mashed banana into the mixture and stir. The easiest way to mash a banana is to use a potato masher. If you don't have one, you can also use a fork to mash it. Add the dry ingredient mix and stir well.

      Put 12 muffin tin liners into the muffin pan. You will be making one dozen muffins with this recipe. Fill the liners about half full. Place them in the oven at 400 degrees. Cook the muffins for approximately 18 to 20 minutes until they are golden brown on the top. Let them cool completely before you take them out of the pan.

Tips & Warnings

  • The best bananas for this recipe are already turned brown and overripe. They are perfect for baking and easy to mash.
