  • Dowel rods
  • Fondant smoother
  • Calla lily former
  • Gum paste
  • Yellow food coloring
  • Tooth pick
  • Gum glue
  • Powered sugar
  • Shortening
  • Rolling pin
  • Medium circle cookie cutter
  • Fondant shaping foam set
  • Yellow colored sugar
  • Candy melts
  • 1 tablespoon meringue powder

Instructions

  1. Preparing the Cakes

    • 1

      Bake your tiered cakes in any shape. Allow the cakes to cool before icing with the desired icing flavor.

      Place the cakes on cake boards the same size as the cakes. Use a spatula to spread the icing over the cakes. Be sure to cover each cake completely with icing. Place the cakes in the refrigerator to allow the icing to harden and remove to apply a second layer of icing to ensure that the cakes are smooth and that there are no crumbs showing through.

      Measure and cut the dowel rods to fit each cake layer. Place the rods in the layers to prepare for stacking. Sharpen one end of one dowel rod to use as a stabilizer for all the cake layers.

      Stack the cake tiers on each other according to size, placing the smaller cakes on top of the larger cake until the cakes are completely stacked. Push the sharpened dowel rod through the center of the stacked cakes to ensure the cake is stable.

      Roll fondant onto a flat surface and place over the cakes. Smooth the fondant with a fondant smoother to ensure that there are no lumps.

    Making the Flower

      Rub shortening onto a flat surface to ensure that the gum paste does not stick.

      Roll the gum paste onto the surface using the rolling pin, and cut with the calla lily cutter.

      Place the cut out on the thin foam and thin the edges with the ball tool. Hold the ball tool like a pencil and place it on the foam at the edges of the of the gum paste cut out. Slide the ball tool around the outline of the cut out and be sure to thin the edges around the entire cut out.

      Dust the calla lily former with confectioner's sugar or corn starch to prevent sticking before placing the cut out around the former. Wrap one side of the cut out around the former with the wide end of the cut out toward the wide end of the former and the narrow end at the narrow end of the former.

      Mix the meringue power and water in a bowl to make the gum glue. Brush the edges of the wrapped end of the cut out with gum glue adhesive using a small paint brush. Wrap the other side of the pedal so that it overlaps the wrapped pedal edge. Place the former wide side down and allow the flower to dry. Repeat this process for each flower.

    Making the Flower Center

      Place a tooth pick in the yellow food coloring and into the gum paste, and kneed to make the gum paste yellow.

      Roll the gum paste on a smooth, shortened covered surface, and cut out medium round circles. Each circle will make two flower centers; cut out one circle for every two flowers you will make.

      Cut the circle in half and roll between your hands to elongate the gum paste. The center should be approximately 1¼ inch long to fill the center of the flower.

      Brush ¾ of the center with gum glue and roll in yellow colored sugar; then, set aside to dry. Continue this process with each center.

      Brush gum glue on the bottom of the flower center after it has dried and gently insert it into the calla lily. Press gently to ensure that the center is attached to the flower.

      Melt the candy and spread the melted candy on the cakes where you would like to position the flowers; gently press the flowers in place. Allow several minutes for the candy to harden before moving the cakes.
