Vegetarians can have their sausage and eat it too, thanks to vegetarian-friendly sausage substitutes. Gimme Lean is a brand name vegetarian sausage made from textured soy protein and wheat gluten. This product comes in rolls like ground sausage, and it stores and cooks just like ground meat sausage. Gimme Lean sausage will not be in the meat section of a grocery store.   • 1 tbsp. olive oil

Instructions

      Heat the olive oil over medium-high heat in the skillet.

      Add the entire contents of a 14 oz. package of Gimme Lean sausage to the skillet.

      Break up the sausage roll with the spatula as it cooks.

      Stir the sausage in the skillet until it has completely crumbled and all surfaces are a dark brown. Add the sausage to any recipe requiring ground, cooked sausage.
