Things You'll Need

  • Sharp knife
  • 1 qt. fresh strawberries
  • 1 to 1 1/2 cups sugar
  • Saucepan
  • 3 tbsp. cornstarch
  • 3/4 cup water
  • Baked pie shell

      Cut the strawberries into thin slices with a sharp knife. Cover the strawberries in 1/2 cup of sugar. Allow the strawberries to sit in the refrigerator overnight.

      Drain the resulting juice from the berries into a saucepan and heat over medium heat. Add an additional 1/2 to 1 cup of sugar to the juice and heat until simmering.

      Mix 3 tbsp. of cornstarch with 3/4 cup of water and add to the saucepan. Boil for 10 minutes or until very thick. Remove the juice from the heat.

      Place the berries in a baked pie shell. Pour the juice over the berries. Chill for several hours or overnight before serving.
