Try fried cucumbers for a new take on a familiar vegetable.

Cucumbers are versatile vegetables that can be used in a variety of dishes. Young or small cucumbers are best for frying. Perfectly fried cucumbers will have an even golden color. If over-fried, they may not retain their country-cooked flavor. Cucumbers can be sliced or cut in half lengthwise before frying. Add this to my Recipe Box.

  • Knife
  • Paper towels
  • 2 cups flour
  • Seasoning of your preference

Instructions

    • 1

Wash and peel the cucumbers. Slice or cut them according to your preference. Thin slices will cook quickly and evenly.

    • 2

Dry the slices by patting them with paper towels.

    • 3

Mix flour, seasoning, salt and pepper in a bowl and roll the cucumber pieces in the mixture until evenly covered.

    • 4

Add oil to the skillet and preheat to medium. Do not allow the oil to smoke, as the cucumbers may burn.

    • 5

Add cucumber slices or pieces to the oil and allow them to turn golden brown on all sides. You may have to gently turn the pieces.

    • 6

Pat the cooked cucumber with paper towels to soak up excess grease. Serve hot.
