Baker's Corner Blueberry Premium Muffin Mix costs about $2 for the 18.25-oz. package that yields about 12 muffins flavored with Maine blueberries.   • Colander
  • Large mixing bowl
  • Egg
  • 1 cup water
  • 3 Tbsp. vegetable oil
  • Large spoon
  • Paper muffin cups
  • 12-count muffin tin

      Preheat the oven to 425 degrees Fahrenheit.

      Drain the included can of Maine blueberries. Pour the blueberries into the colander. Rinse and drain the blueberries. Set aside.

      Pour the baking mix into the mixing bowl. Add the egg, water and oil. Mix until blended thoroughly.

      Fold in the blueberries.

      Insert one paper muffin cup into each indent in the muffin tin.

      Fill each muffin cup about three-fourths of the way full. The batter will rise above the tops of the muffin cups during the baking process.

      Bake for approximately 15 to 20 minutes in the preheated oven. Check periodically to ensure the muffins aren't burning. Some ovens cook faster than others.

      Remove the muffin tin from the oven. The muffins should be a golden brown on top.

Tips & Warnings

  • Test whether the muffins are done, by inserting a toothpick in the center of one muffin. If the toothpick is wet when removed, return the muffins to the oven to cook for a few minutes longer. If the toothpick is clean or has small crumbs attached, the muffins are ready.
