How to Roast Peppers in a Broiler
If your recipe calls for roasted peppers, or you just have a hankering for them, you don't need a grill to get the job done. You can roast peppers in your oven's broiler. Roasting peppers under a broiler or on a grill will cause the pepper's skin to bubble and eventually blacken. While this may look unappealing, once the skin is pulled away, you are left with a tender pepper with a wonderful roasted flavor. Does this Spark an idea?

Place the broiler on low heat. Wait a few minutes for the broiler to warm.

Place the peppers on a roasting pan and place the pan in the boiler. Keep an eye on the peppers, turning them with tongs every few minutes. Once the peppers' skin has turned black, remove the peppers from the broiler.

Grasp each pepper with tongs and place them individually in brown paper lunch bags. Fold the top of each bag closed, and roll it down three times. Put the bags aside for 15 to 20 minutes.

Remove the peppers from the bag, and lay them on a hard, flat surface.

Pull the skin from the peppers. Because you roasted and then steamed the peppers in the paper bag, the skin will pull off easily. Prepare the peppers according to your recipe. Many recipes will have you cut the stem and bottom from the pepper, then slice the peppers open and remove the seeds.

Tips & Warnings
If the peppers you are broiling are spicy, handle them with gloves.
