How to Freeze Foods in Aluminum Tins
Freezing is an easy, effective and convenient way to preserve food. You can freeze any food with the exception of eggs in their shell or food in a can. Some foods, however, simply don't freeze well, such as cream-based sauces or lettuce, for example. Proper packaging is imperative to preserving food quality, color, moisture, flavor and texture. Rigid containers, including aluminum tins, are suitable for freezing foods, and have the added benefit of being reusable. Cool any food before freezing it. Immerse hot dishes in a larger dish filled with ice water to cool the food quickly and maintain food safety. Freeze food immediately when it reaches room temperature.

Leave about half an inch of headroom at the top of the aluminum tin to allow for expansion during freezing.

Pack foods tightly, and run a wooden spoon or spatula around the inside of the aluminum container to eliminate any air pockets.

Wipe the sealing edges with a cloth or paper towel to ensure there is no moisture or debris that will prevent a good seal.

Place a piece of plastic wrap directly on top of the food to prevent air exposure.

Place the top on the aluminum tin and surround the seal with freezer tape. Ensure that it's proper freezer tape, which will maintain its seal in low temperatures.

Tips & Warnings
Label the package by listing the contents, date and amount.
Maintain your freezer at a temperature of 0 degrees F or lower.
Freezing does not sterilize foods as canning does. If food freshness is questionable, discard it; don't bother freezing it.
