How to Freeze Hot Peppers in Olive Oil
Preserve this season's pepper harvest by freezing them to be used at a later date. Adding olive oil to the peppers once they are tender allows the peppers to absorb flavor and moisture while they are in the canning jar, giving you a flavorful batch of peppers for your cooked dishes. To freeze hot peppers, you can use either olive oil or extra virgin olive oil, depending on your preference, and any type of peppers. Does this Spark an idea?

Split the peppers and remove the seeds, veins and stems. Slice them into strips or cubes.

Saute the peppers in olive oil with your choice of seasonings until tender. Remove from heat.

Pack the sauteed peppers into a canning jar, leaving 1/2 inch of room on the top of the jar.

Heat 1 cup of olive oil in a saucepan until it reaches 300 degrees.

Pierce a hole through the middle of the peppers in the jar with a pointed knife until the hole reaches the bottom of the jar.

Pour the heated oil slowly into the hole, leaving 1/2 inch of room on the top of the jar. Replace the lid so that it is tightly sealed and place the jar into the freezer until ready for use.

Tips & Warnings
You can also freeze peppers by placing the peppers and heated olive oil in a freezer bag.
Label the jar with the contents and the date you placed the jar of peppers in the freezer.
