How to Make Pear Jelly From Pear Juice
Making jellies, jams and pickles is a great way to spend cold days indoors. You can make the best use of the seasonal fruits or bulk buys while making condiments to stock up your shelves. Pear jelly is a tasty accompaniment to roast pork or can be added to sauces. It can be easily made by using the juice of pears. Does this Spark an idea?
Things You'll Need
- 6 cups pear juice
- 7 cups sugar, or 4 cups sugar + 3 cups juice (see Tips)
- Funnel
- Dry pectin
- 1/4 cup sugar
- Large pot
- Large spoons and ladles
- Jars with lids
- Dry towel
- Teaspoon, placed in cold water

Measure 6 cups pear juice into a large pot.

Mix dry pectin with 1/4 cup sugar. The amount of pectin you add will affect the texture of the jelly. Follow the quantity guidelines on your brand of pectin to obtain the correct measurement. Do not hesitate to add slightly more to make the jelly stiffer if you prefer.

Add the pectin to the pear juice, and bring to a boil. Stir continuously using a wooden spoon to prevent the mixture from burning. It should take between 5 and 10 minutes to boil.

Add 7 cups of sugar to the boiling mixture of pear juice and pectin, and stir thoroughly. Wait for the mixture to come back to a boil, and then leave it on high heat for 1 minute.

Turn off the jelly while you test its consistency. Get the teaspoon out of the cold water, and pick up a spoonful of jam from the pot. Leave the jam to cool down at room temperature for 30 minutes. If it is too runny after this time, add more pectin to the mixture and re-boil.

Funnel the jelly into jars and leave them to cool. Use a dry towel to handle the jars, as the jars will be too hot to touch.

Seal the jars and store the pear jelly in a cool, dry cupboard.

Tips & Warnings
This recipe makes a traditional sweet jelly. To keep it natural, substitute 3 cups of the sugar for fruit juice instead, or use a sweetener. Choose apple or grape (or a mixture of both) to complement the pear flavor.
