Instructions

    • 1

Peel off the papery husks from the tomatillos by hand and rinse them thoroughly with cold water. Dry the damp tomatillos with a paper towel or a hand cloth.

    • 2

Bring a pot of water to a boil and place the tomatillos into the boiling water until they become soft all the way through.

    • 3

Drain the water and place the tomatillos into a food processor. Blend the tomatillos until they are pureed. The tomatillos can now be used as a garnish or salsa. If using as a salsa, add salt and pepper to taste and squeeze a wedge of lemon into the tomatillo puree.

    • 4

Place whole tomatillos underneath a broiler or on top of an open flame until their skins are completely charred. This is called fire roasting. Turn the tomatillos as they cook to blacken each side. Puree the tomatillos to create a smoky salsa garnish.

Tips & Warnings

  • Pan fry the tomatillos on an ungreased pan to achieve a dry roast effect.
