      Measure 3 tbsp. of unsweetened cocoa powder for every 1 oz. square of chocolate in your recipe. If your recipe calls for 4 oz. of chocolate, you need 12 tbsp. of cocoa powder.

      Mix the cocoa powder with a small amount of the liquid in the recipe. Stir until the powder is completely dissolved.

      Add 1 tbsp. unsalted butter for every 1 oz. square of chocolate in your recipe. This amount is in addition to any butter already called for in the recipe.

  • Some recipes, like most fudge brownie recipes, do not contain milk, water or oil. Instead, they call for large amounts of melted butter. In this case, simply dissolve the cocoa powder in the melted butter.
