Canning requires a vinegar with 5 percent acidity to preserve produce, so adding wine to vinegar may dilute the acidity of your vinegar. Prepare all vegetables or meats as called for by the canning recipe.

Substitute champagne vinegar, rice vinegar or cider vinegar for the equivalent amount of white wine vinegar. If you are not concerned with slightly altering the color of your finished product, red wine vinegar in equal amounts to the white wine vinegar may also be substituted.
