Vegetable Stir-Fry with Hoisin Sauce thumbnail

If you're looking for an Asian-inspired vegetarian dish, vegetable stir-fry with hoisin sauce and tofu is a blend of hearty vegetables and protein, without the meat.   • 6 tbsp. hoisin sauce
  • 4 tbsp. olive oil
  • 4 tbsp. reduced-sodium soy sauce
  • 3 tbsp. apple-cider vinegar
  • 4 tbsp. apple sauce
  • 3 cup vegetable broth
  • 3 cloves garlic, minced
  • 3 cups tofu (cut in 1-inch squares)
  • 3 tbsp. corn starch
  • 3/4 cup water
  • 3 green onions, chopped
  • 2 red bell pepper, strips
  • 2 cup broccoli, chopped
  • 1 cup corn
  • 1 cup peas
  • 1 cup mushrooms, chopped (optional)

Instructions

      Mix the 6 tbsp. of hoisin sauce, 2 tbsp. olive oil, 2 tbsp. soy sauce, 3 tbsp. apple-cider vinegar, 4 tbsp. apple sauce (used as a sugar substitute), 3 cups vegetable broth and minced garlic in a small pot. Place the pot on a burner over medium-high heat and stir occasionally.

      Bring the mixture to a boil. Mix 3 tbsp. cornstarch with 3/4 cup of water and pour in the sauce mixture; blend well.

      Reduce the heat, cover and simmer until the mixture thickens. Turn the heat off and set the sauce mixture aside to cool.

      Pour 2 tbsp. olive oil into a large skillet. Stir-fry the tofu in olive oil until it is browned. Add 2 tbsp. of soy sauce and let it heat for 3 minutes, stirring frequently.

      Add chopped green onions, red bell pepper strips, broccoli, corn and peas into the skillet with the tofu. Stir-fry the vegetables for 5 minutes.

      Spoon the hoisin sauce mixture into the skillet with the tofu. Cook for 15 minutes, or until broccoli is soft and tender.

      Toss chopped mushrooms into the stir-fry while the mixture is still hot. Serve over white or fried rice or chow mein noodles.

Tips & Warnings

  • For non-vegetarian diets, chicken, salmon, tuna, shrimp, steak and even lamb may be added to the dish in place of tofu.

  • Experiment with different types of vegetables, such as green beans, spinach, carrots and potatoes to add more flavor and color to the vegetable stir-fry.

  • A sweet and sour dish may be created by implementing crushed pineapple or mandarin oranges into the recipe.

  • A couple squirts of lemon juice provides the dish with a citrus kick.
