Pour the egg mixture into the hot pan. Swirl the pan around so that the egg mixture covers the bottom of the pan in an even layer. As the egg cooks, slip a spatula under the edge and lift it up, allowing the liquid egg to run underneath. Do this all around the edge of the perimeter of the egg disk.

4
Sprinkle omelette filling ingredients over half of the egg when the egg is set on the bottom but still moist on top. Slip the spatula underneath the half of the egg that doesn't have any filling ingredients and fold it over the filled half. Move the filled omelette into the center of the pan.

5
Cook the omelette in the center of the pan for another minute until the egg is completely set. Remove the omelette to a warm plate and serve it immediately.
