      Make sure all of your ingredients are at room temperature when you start to assemble your cookie dough. This is particularly important for your eggs in order to achieve better consistency when mixing and whisking.

      Do not over mix your ingredients. The less you stir your ingredients together, the chewier your cookies will be. When mixing together your dry and wet ingredients, do not use a mixer. This will generally mean that you need to double or triple the amount of dough per cookie that your recipe suggests, as well as add a few minutes to the baking time. You will end up with fewer cookies, but the benefits are worth it. Larger chocolate cookies have different textures, from chewy to crispy, that make for a more exciting cookie.
