Spaghetti squash, or vegetable spaghetti, is a golden-colored melon with a stringy interior that resembles noodles. Typically, only the insides are used in cooking as a substitute, or addition to, noodles. You can stir-fry spaghetti squash with other veggies for a healthy meal that requires less than 20 minutes to prepare. The squash in the stir fry negates the need for noodles or rice, providing a filling base. A spaghetti squash stir-fry yields six servings. Does this Spark an idea?

Things You'll Need

  • 1 3-lb. spaghetti squash
  • Sharp knife
  • Microwave-safe dish
  • Spoon
  • 1 chopped green bell pepper
  • 1 chopped red bell pepper
  • 2 shredded carrots
  • 1/2 cup vegetable stock
  • 2 tbsp. dried basil
  • 1 tsp. ground black pepper
  • 1/2 tsp. salt
  • 1/3 cup grated parmesan cheese

Instructions

      Pierce the outside of a 3-lb. spaghetti squash 10 to 12 times with a sharp knife and place in a microwave-safe dish. Microwave on high for six minutes, flip the squash over and microwave for another six minutes.

      Cut the squash in half, scoop out and discard its seeds with a spoon. Scoop out its noodle-like strands and discard the rest of the squash. Set the noodle-like strands to the side.

      Place a large frying pan over high heat and add 1 tbsp. vegetable oil. Add 1 chopped green bell pepper, 1 chopped red bell pepper and 2 shredded carrots. Cook, stirring continuously, for seven minutes.

      Add 1/2 cup vegetable stock, 2 tbsp. dried basil, 1 tsp. ground black pepper, 1/2 tsp. salt and the reserved squash strands. Continue to stir over high heat for three minutes.

      Sprinkle with 1/3 cup grated parmesan cheese and serve immediately.
