Millet is a grain that is used extensively in other areas of the world. Millet is produced in places like China, India and Europe. In the US, it is grown mainly in Colorado, the Dakotas and Nebraska. Millet is a common cereal grain, and is gluten free, making it a sensible choice for people sensitive to gluten. Add millet seeds to a standard coffee grinder and grind them down into a powder to make your own millet flour. Alternately, visit your local health store and purchase some there.

Substitute roughly ¼ of the flour called for in a baking recipe with millet flour to enhance nutrition and reduce gluten content. Use all-purpose or whole-wheat flour for the rest.

Use 1 tbsp. of xantham gum in recipes that call for millet flour to help bind the mixture together in the absence of gluten.

Make the dough for unleavened bread products like naan bread exclusively with millet flour if you like. Substitute another flour for some of the millet flour if you would like a different texture or flavor.

Use millet flour to make pancakes for breakfast. Use as you would regular flour, adding egg, milk or buttermilk, vegetable oil, baking soda and baking powder to help them puff up when cooked.
