There are numerous measures you can take to correct a runny German chocolate cake frosting. As it is a cooked frosting, you may just have to wait for it to cool to achieve thickening. However, if the frosting is still runny, you can remedy it through various additions or simply just cooking it longer. If you do not wish to add any additional ingredients, be more sparing of the frosting as you decorate and find a different recipe for the next time. Does this Spark an idea?

      Reheat the icing slowly over low heat so that the coconut blends in well.

      Measure coconut out in a 1/2-cup measuring cup. In a typical recipe, the coconut measures at about 1 cup. It's possible that, depending on how loosely packed the coconut was, there may be a discrepancy between the recipe and the measurement.

      Add additional chopped pecans, if desired, to balance out the coconut you have added. Keep the proportions of the original recipe, if possible.

    Cornstarch

      Continue cooking the icing over low heat, or bring it back up to a medium temperature. Avoid overcooking the frosting, given that there are usually eggs in the recipe.

      Make a slurry of 1 tsp. to 2 tbsp. of cornstarch dispersed in 1 tbsp. water or milk and add that to the mixture as it cooks.
