Make a healthy and filling salad with grilled chicken breast, crisp lettuce and a rainbow of fresh vegetables. Things You'll Need

  • 2 8-oz. boneless, skinless chicken breasts
  • 2 tbsp. olive oil
  • Salt and ground black pepper to taste
  • Hand soap
  • Grill pan
  • Knife
  • Cutting board
  • 3 hearts of romaine lettuce, chopped
  • 1 diced avocado
  • 1 diced red onion
  • 1 diced cucumber
  • 2 diced tomatoes
  • Salad tongs
  • 2 cups shredded cheddar or Monterey jack cheese

Instructions

      Coat the chicken breasts with olive oil. Sprinkle both sides of each chicken breast with salt and ground black pepper to taste. Wash your hands thoroughly with soap and water to prevent the spread of bacteria.

      Place a non-stick grill pan over medium-high heat. Set the chicken breasts into the pan and grill them for seven minutes on each side, or until they are completely cooked through. Take the chicken out of the pan and set it on a plate.

      Chop romaine lettuce and place it into a large salad bowl. Dice avocado, red onion, cucumber and tomatoes and place them into the bowl. Toss the vegetables with salad tongs to mix.

      Chop the chicken breasts and set the pieces on top of the salad. Sprinkle shredded cheddar or Monterey jack cheese over the top of the chicken. Serve the salad with a choice of salad dressings.

Tips & Warnings

  • Cook the chicken breast until its internal temperature reaches 165 degrees Fahrenheit when checked with a food thermometer.
