Lamb chump chops come from the back end of the lamb.

The chump is a cut of meat from the back end of a sheep just above the leg. It is often cut into chops, and has a rich lamb flavor. Lamb chump chops can be prepared on your grill, but if it isn't grilling season you can make them just as well in a pan on your stovetop. Does this Spark an idea?

  • Salt
  • Pepper
  • Jerk spice
  • Garlic
  • Mint
  • Olive oil
  • Saute pan
  • Spatula or tongs
  • Cutting board
  • Knife

Instructions

    • 1

      Season your chump chops with salt and pepper, or the marinade of your choice. Flavors may include jerk spice, garlic or mint.

    • 2

      Turn your burner to medium heat and add about a tablespoon of olive oil or other cooking oil to a sauté pan.

    • 3

      Wait for the oil to heat and sear your chump chops on both sides until the outside is a golden brown color.

    • 4

      Reduce the heat and cook for six to eight more minutes on each side.

    • 5

      Place your chump chops on a cutting board or plate and let them rest for 10 minutes before cutting.

  • Consider making a pan sauce with garlic, cream or any other ingredients you like for an added dimension to your chops.
