Cucumbers are not just for finger sandwiches and salads any more. These crunchy green vegetables are versatile and loaded with nutrition. They can perk up any food from a tired casserole to side dishes. An average cucumber has about 45 calories, no fat and contains Vitamins A and C. It is also a source for iron and protein. Cucumbers are in season all year long in most places so stock up and make these dishes to keep in your freezer for unexpected company or when you just do not feel like cooking one night. Instructions

  1. Cucumber casserole

    • 1

      Rinse the cucumbers under cool water and peel them using a vegetable peeler or a sharp knife. Cut the cucumbers in half the long way. Then cut each half down the center the long way again.

      Combine 1/2 cup of flour, 1 tsp. of salt and 1/4 of tsp of pepper together in a dish. Roll the cucumber quarters in the flour mixture and arrange in a baking dish.

      Drizzle the top with the melted butter and add the Worcestershire Sauce sparingly to each piece of cucumber. Finely crush 1/4 of a cup of potato chips and sprinkle over the cucumbers.

      Bake at 350 degrees for 25 minutes.

    Stuffed baked cucumbers

      Wash the cucumbers under cool running water and peel them with a vegetable peeler or sharp knife. Cut the cucumbers in half lengthwise so that you have two identical pieces. Using a small spoon, carefully remove the seeds and center of both halves of the cucumber and place it in a chopping bowl.

      Add the tomato, celery and onion to the cucumber in the chopping bowl and chop all the ingredients coarsely.

      Melt 2 Tbsp. of butter in the frying pan and add about 1/2 cup of bread crumbs to the melted butter. Toss the crumbs until the butter is soaked into the crumbs.

      Place the hollowed cucumbers in a baking dish and spoon the chopped ingredients into each cucumber.

      Sprinkle with the buttered bread crumbs and bake at 375 degrees for 45 minutes.
