How to Frost an Ice Cream Cake
Ice cream cakes contain both cake and ice cream in a single dessert. When frosting such a cake, have everything ready and be prepared to work quickly to keep the ice cream portion of the dessert from melting. Instead of traditional cake frosting to cover an ice cream cake, use frozen whipped topping. This option will not crack when the cake is returned to the freezer, is readily available and can be colored or flavored to suit your tastes. Does this Spark an idea?
Things You'll Need
- 8-oz. container frozen whipped topping, thawed
- Spatula
- Plastic wrap
- Bread knife

Remove the ice cream cake from the freezer and remove any wrapping from the outside.

Spread the whipped topping on the sides of the cake, smoothing the "frosting" with the spatula.

Top the cake with additional whipped topping. Flatten out ripples in the whipped topping with the spatula.

Wrap the ice cream cake with plastic wrap or cover it with a cake dome to seal out freezer odors. Return the cake to the freezer for at least 2 hours or until the whipped topping freezes completely.

Remove the cake from the freezer and unwrap it. Let it thaw for 10 minutes to make slicing easier. Use a long bread knife dipped into hot water to slice the ice cream cake into servings.

Tips & Warnings
Whip heavy whipping cream to use instead of a frozen whipped topping, if desired.
Add color and flavor to the whipped topping used as the ice cream cake frosting. Stir food coloring and flavor extract into the whipped topping before frosting the cake.
Optionally, scatter bite-sized candies or chocolate chips over the top of the cake. Press handfuls of the candies into the sides of the cake with your hand if you want to decorate the sides of the cake. The whipped topping will hold the candies in place.
