How to Roll a Croissant
Flaky, buttery croissants not the same without their signature rolled, crescent shape. Croissants are made from light puff-pastry dough which can come in any shape, but a croissant is always rolled into a crescent. Proper rolling not only gives the croissant its characteristic shape, but also facilitates the essential rising and puffing of the dough before it is baked. This is not something you can do by looking at a picture, as there are ingredients to add and specific tools to use while rolling and shaping. Does this Spark an idea?
Things You'll Need
- Croissant pastry
- Flour
- Rolling pin
- Pizza cutter
- Baking sheet
- Egg
- Whisk
- Brush
- Bread towel

Sprinkle flour on a flat surface you're going to roll the croissants on.

Roll out your dough on the surface so it is about 1/4 inch in thickness. Create a 44-by-8-inch rectangle with this dough.

Use your pizza cutter to cut the dough into smaller 5-by-8-inch rectangles. Then cut each rectangle once diagonally so you end up with two triangles per rectangle of dough.

Cut 1/2 inch into the shortest side of each triangle.

Hold the shortest side of the triangle in one hand and the point of it in your other hand. Carefully pull until the triangle is 8 inches long.

Place the triangle on your floured surface. Fold up the shortest edge of the triangle to begin rolling. Continue rolling until the point of the triangle is beneath the roll and two legs are protruding from each side of the roll.

Place your rolled croissant on an ungreased baking sheet. Pull the two legs together so that they touch in front of the rolled triangle. Repeat for your other croissants.

Whisk an egg with 1 tbsp. of water thoroughly. Use your brush to lightly drizzle and glaze this mixture over the top of each croissant.

Cover your croissants using a bread towel. Set the baking sheet in a location where it can rise for one hour in a 75 to 80 degrees Fahrenheit temperature. The legs should separate during this rising process so that the croissants attain crescent shapes.

Bake according to the instructions on your recipe. This is usually for about 20 minutes at 400 degrees Fahrenheit.

Tips & Warnings
To make a chocolate croissant, place bittersweet chocolate along the short side of the triangle right before you roll it.
As you roll the croissants, be careful not to press down so hard that you mash the layers of dough together.
