1
Place the uncooked chicken in the roasting pan. Preheat your oven to 375 degrees Fahrenheit.
-
2
Rub the outer surface of the uncooked chicken with your choice of spices and seasonings. For example: sage, rosemary, chili powder and lemon pepper create a mouthwatering blend when ground together in equal amounts of 1 tsp. each and then rubbed liberally over the surface of the chicken.

3
Cover the roasting pan with its lid. If it doesn't have a lid, use a large sheet of aluminum foil. Pinch the edges of the aluminum foil tightly around the edges of the roasting pan to make it airtight.
-
4
Place the covered pan in the oven. Let it roast for approximately 1 hour. With the pot covered, the heat is trapped inside of the pot, along with any steam emanating from it. This, in turn, traps moisture into the chicken, making it more flavorful and moist. The natural juices produced by the cooking chicken are also unable to evaporate thanks to the pot being covered. This eliminates the need for basting.

5
Remove the lid or aluminum foil from the pan and roast the chicken for an additional 15 to 20 minutes if you want it to brown and get a crispy skin. Otherwise, remove and enjoy it with your choice of side dish options.
