For the health conscious, it can sometimes be a challenge to find tasty, filling meals that are not high in calories, fat and carbohydrates. Vegetables are almost always a safe choice, but vegetables can get boring and repetitive. Spice up your favorite vegetables by doing something unconventional to them or eating them in a different way. With zucchini for instance, you may regularly eat it sliced and boiled, steamed or sauteed in olive oil. Turn it into a tasty salad instead, using a grater to shred the zucchini. Things You'll Need

  • 4 cups grated zucchini
  • 1 lemon, juiced
  • Zest from lemon
  • 2 tbsp. chopped mint
  • 1 tbsp. chopped dill
  • 2 tbsp. extra-virgin olive oil
  • 6 oz. feta crumbled feta cheese
  • Salt and pepper, to taste

Instructions

      In a large bowl, add in the grated zucchini, along with the lemon juice and the zest from the skin of the lemon, the mint, dill, feta cheese and olive oil.

      Toss the bowl to combine all the ingredients.

      Cover the bowl in plastic wrap and place in the refrigerator for at least two hours. Serve within 24 hours of making the salad.

Tips & Warnings

  • If you don't prefer mint, replace with chopped cilantro.

  • Add cherry tomatoes cut in half for color.
