Freeze leftover pancake batter in an airtight container for up to one week, and thaw it overnight in the refrigerator before use. Basic pancake mix adapts well to making biscuits, and so does the prepared pancake batter.   • Baking sheet
  • Cooking spray
  • 1 to 1 1/2 cups dry pancake mix
  • Rolling pin
  • 2 1/2-inch biscuit cutter
  • Cooling rack

Instructions

      Spray a baking sheet with cooking spray and preheat the oven to 425 degrees Fahrenheit.

      Stir 1 cup of dry pancake mix into 1 cup of prepared pancake batter. Slowly add more pancake mix, 1 tbsp. at a time, until it comes together as a soft dough.

      Turn the dough onto a lightly floured surface.

      Press the dough flat and fold it over. Repeat this 10 times to knead the biscuit dough.

      Roll the dough to ½-inch thickness and cut into biscuits with a biscuit cutter. Reroll any scraps of dough until all of the biscuit dough has been used.

      Arrange the cut biscuits on the sprayed baking sheet with 2 inches separating them.

      Bake the biscuits at 425 degrees Fahrenheit for nine to 11 minutes or until golden brown.

      Remove the biscuits from the baking sheet and place on a cooling rack before serving warm.

Tips & Warnings

  • Stir in 1 tsp. of garlic powder and 1/4 cup of shredded sharp cheddar cheese to make garlic cheese biscuits.

  • Brush the tops of the biscuits with melted butter and sprinkle the biscuits with cinnamon and sugar for a sweet treat.

  • Add 1/4 cup of raisins or other dried fruit to the pancake batter before stirring in the dry mix, if desired.
