Pineapple juice is often used to supplement or replace water in baked breads. The result is bread with a sweet, fruity flavor and dense texture. One bread recipe that uses pineapple juice is "Hawaiian bread." You can add spices and flavorings such as vanilla and and ginger to complement the pineapple in breads.       Replace the amount of water you would use in your bread recipe with the same amount of pineapple juice. Pour the pineapple juice into a microwaveable container and heat it on full power for approximately 45 seconds. Add the packet of yeast to the heated pineapple juice, stir them thoroughly and let the mixture stand for five minutes.

      Place the pineapple-yeast mixture into a large bowl and add the remaining ingredients from your favorite bread recipe, minus the water.

      Whisk the ingredients thoroughly to create the dough. Knead the dough and leave to rise for 1 1/2 to 2 hours. Bake at 350 degrees F for 30 minutes.

    Glazes

      Combine 3 tsp. of pineapple juice with 1/2 cup of powdered sugar. Add any other flavors other as desired. To make a pina colada glaze, add 1/2 tsp. of rum extract and 1/2 tsp. of coconut extract.

      Mix the ingredients thoroughly. If the consistency is too watery, add more sugar. Alternatively, add more pineapple juice to thin the mixture.

      Pour the glaze over freshly baked bread to sweeten.
