  • Buttered 2 qt. baking dish with cover
  • 4 1/2 cups milk
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 1/2 cup uncooked rice (not quick-cooking)
  • 1/2 cup raisins
  • Ground cinnamon or nutmeg for dusting (optional)

      Preheat oven to 325°.

      Combine milk, sugar and salt in the baking dish; stir to blend. Mix in the rice and raisins. Sprinkle a dusting of cinnamon or nutmeg over the top, if desired.

      Bake, covered, in the preheated oven for approximately 1 1/2 hours, stirring periodically for a more even consistency.

Tips & Warnings

  • This version is mildly sweet. If you prefer a sweeter version, increase the sugar by 1/4 cup.

  • Currants, sultanas or diced apples can be used in place of raisins.

  • Use half white sugar, half brown sugar for richer flavor.

  • Add a teaspoon of vanilla or 1/2 teaspoon almond flavoring for variety.

  • As the rice and raisins expand during baking, the mixture may boil over. Place a cookie sheet on the lower rack to catch any overflow.

  • Allow the just-out-of-the-oven pudding to cool slightly.
