The Easiest Way to Make Shrimp Fried Rice
If you have the local Chinese take-out restaurant on speed dial, you've probably ordered the fried rice more times than you can count. The popular rice dish is usually offered with vegetables, chicken or shrimp. Shrimp fried rice, though popular is slightly more expensive and if you want to cut down on your eating out budget, it's quite easy to make at home. Shortcuts such as using pre-cooked rice and shrimp makes preparing the dish fast and convenient. Does this Spark an idea?
Things You'll Need
- 3 eggs
- 5 tbsp. peanut oil
- 1 cup frozen peas and carrots
- 1 celery stalk, diced
- 1/4 lb cooked shrimp
- 1 cup cooked rice
- 1 tsp. soy sauce
- Salt and pepper, to taste

Beat the three eggs in a small bowl and set aside.

Heat 1 tbsp. of the oil over medium-high heat in a wok or large saucepan.

Saute the frozen vegetables and celery in1 tbsp. of oil.

Add the cooked shrimp when the vegetables are heated through. Remove from the wok, drain the oil and set aside.

Re-heat the wok and add 3 tbsp. of oil to the hot wok.

Add beaten eggs, stirring until partially cooked, about two minutes, then add the cooked rice to the pan, stirring until the eggs are fully cooked and the rice is fluffy and separated.

Stir in the mixed vegetables and shrimp, and season to taste.

Stir in one tsp. soy sauce and stir well. Serve the shrimp fried rice hot, straight from the wok.

Tips & Warnings
Uncooked shrimp can also be used as shrimp cooks quickly. Saute uncooked shrimp before adding the frozen vegetables.
Serve fried rice with soy sauce on the side.
