Hot chicken wings originated in Buffalo, New York. The wings are usually deep-fried before being tossed in a variety of sauces, including barbecue, honey mustard and hot wing sauce. They are served with a cooling dipping sauce, which is usually blue cheese or ranch dressing. Hot chicken wings are normally accompanied by crunchy vegetables, such as celery and carrot sticks.   • Chicken wings
  • Vegetable or canola oil
  • Salt and pepper
  • Deep fryer (optional)
  • Large heavy-bottomed pot
  • Thermometer
  • Tongs or scoop
  • All-purpose flour (optional)

  • Seasoned salt (optional)
  • Hot wing sauce
  • Blue cheese dressing

      Prepare chicken wings by cutting them into two sections at the joint and throwing away the wing tip. The "drumette" and a double-boned section will remain.

      Sprinkle the wing sections with salt and pepper. If you want to have battered chicken wings, prepare a batter mixture using all-purpose flour, salt, pepper, cayenne pepper and seasoned salt. Mix according to your taste and preferences. Dip the wings in the flour mixture before frying or leave them to cook without batter.

      Heat the vegetable or canola oil in your deep fryer or large pot. If using a deep fryer, add oil according to the manufacturer's directions. If using a pot, use 2 cups of oil for 2 pounds of chicken wings, adding more if necessary. Allow the oil to heat to 375 degrees Fahrenheit. Use a thermometer to measure the temperature.

      Add the chicken wings to the oil a few at a time to keep the temperature high enough. Be careful of the oil splattering and burning you. Leave the wings in the oil until they become golden brown in color, which usually takes about six to eight minutes. Continue frying in batches until they are all done. Make sure the oil is covering them at all times; if not, add more oil. Remove the wings from the oil with tongs or a small mesh scoop.

      Place fried wings in a bowl and toss with your favorite spicy wing sauce until completely coated. Serve with blue cheese dressing and celery sticks.
