How to Grade a Case Knife
Case knives are renowned for their hardwood, synthetic rubber, stag, bone, pearl and imitation ivory handles, in addition to their chrome vanadium, Tru-Sharp, VascoMaX and stainless steel blades. Maintain the sharpness and grade of your case knife blades by using an electric blade sharpener. Sharpen and grade the blade so that it can cut through meat, paper and other materials with ease once again.

Set the knife sharpener on top of a flat surface, such as a table.

Insert the proper sharpening wheels into the sharpener. These are typically the sharpener's fine sharpening wheels, but consult the sharpener's manual if you aren't sure which wheels to use to sharpen/grade your case knives (see References).

Wipe the case knife gently with a cloth to remove any water or grease that may be on it.

Plug the sharpener into a functioning power outlet and turn it on.

Press one side of the blade gently against the sharpening wheels, ensuring the blade remains parallel with the table or other flat surface during grading. Grade the entire side against the wheels to restore the knife's sharpness.

Flip the knife over and run the other side of the blade gently against the wheels, making sure it remains parallel with the table or other flat surface during grading. Grade the entire other side against the wheels to make the knife sharp again.

Turn the sharpener off and unplug it from the outlet. Wipe the knife off gently with a cloth before you use it again.

Tips & Warnings
Always put on safety glasses and leather gloves before sharpening/grading case knives to protect your face and hands.
