Lasagna is an Italian casserole that alternates layers of large, flat noodles, cheese and sauce. Lasagna is a versatile dish that can utilize a variety of ingredients. One common base ingredient for lasagna is spinach. Spinach lasagna is rich in flavor and light enough not to leave you feeling sluggish after a large meal. Things You'll Need

  • Large pan
  • Stove top
  • 1 tbsp. of olive oil
  • 4 cups of fresh chopped spinach
  • 1/2 white onion, chopped
  • 1 tsp. of dried oregano
  • 1 tsp. of dried basil
  • 2 tbsp. of minced garlic
  • 1 32-oz. jar of spaghetti sauce
  • 2 cups of water
  • 2 cups of cottage cheese
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 3/4 cup of chopped fresh parsley
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 egg
  • Large mixing bowl
  • Lasagna pan
  • 16 uncooked lasagna noodles

Instructions

    • 1

      Preheat a large pan over medium heat on a stove top, and the oven to 350 degrees Fahrenheit.

      Add 1 tbsp. of olive oil to the pan and allow it to heat for one minute. Add 4 cups of fresh chopped spinach, 1/2 chopped white onion, 1 tsp. of dried oregano, 1 tsp. of dried basil and 2 tbsp. of minced garlic. Stir the sauce mixture constantly for five minutes.

      Pour one 32-oz jar of spaghetti sauce and 2 cups of water into the large pan and allow to simmer for 25 minutes. Stir frequently.

      Combine 2 cups of cottage cheese, 1 cup of shredded mozzarella cheese, 1/2 cup of grated Parmesan cheese, 3/4 cup of chopped fresh parsley, 1 tsp. salt, 1 tsp. black pepper and one egg in a large mixing bowl. Stir until all ingredients are combined evenly.

      Pour just enough of the sauce mixture into a lasagna pan to cover the bottom. Layer four uncooked lasagna noodles over the sauce mixture.

      Pour 1/2 cup of the sauce mixture and 1/3 cup of the cheese mixture over the lasagna noodles and top with four more noodles. Repeat the layering process until all of the noodles are used, and finish with a layer of sauce on top.

      Cover the pan with aluminum foil and bake for 60 minutes. Remove from the oven and allow to cool for 10 minutes before serving.

Tips & Warnings

  • Allow any leftover lasagna to come to room temperature before refrigerating to prevent bacterial growth.
