Instructions for a Brinkman Gourmet Electric Smoker

The Brinkmann Corporation, the company behind various outdoor leisure and sporting goods products, produces a line of what it calls "gourmet" electric smokers. These units consist of 1500-watt electric heating element, a water pan and two different levels of grills to smoke up to 50 lbs. of food.       Lift the dome lid off the smoker and remove the smoker body from the base pan.

      Place a layer of three to four flavored wood chunks or sticks on top of the lava rock near the electric element. Soak the wood in water for 20 minutes before using it in the smoker to prevent it from burning too quickly.

      Set the water pan inside the smoker body so it sits on the notches of the lower support brackets.

      Set the smoker body back on the base pan.

      Pour warm water into the water pan up to about 1 inch below the rim.

      Set one of the cooking grills on the lower support brackets. Place food on the grill in a single layer with even space between.

      Set the other cooking grill on the upper support brackets. Place food in an even level on this grill.

      Set the dome lid securely on top of the smoker.

      Plug the smoker into an electrical outlet to start smoking the food.

      Allow the food to cook for as long as necessary to properly smoke it. Check the water level every 2 hours and refill the water pan if necessary.

  • Thaw meat, poultry or fish completely before smoking.

  • Use a meat thermometer to determine if food is fully cooked.

  • Add extra flavor to food by adding herbs, juices, marinades, wine, beer, spices or citrus peels to the water pan.

  • Do not use the smoker indoors

  • Always plug the smoker's power cord into a 120-volt GFCI-protected outlet.

  • Do not operate the smoker if the cord or electrical element is damaged.

  • Do not leave the smoker unattended when using.

  • Do not place the smoker near flammable liquids, burners or a heated oven.

  • Keep children and pets away from the smoker while in use.

  • Place the smoker on a hard, level surface.

  • Wear gloves when reaching into or under the smoker to protect your hands.

  • When lifting the smoker's lid, keep your body, hands and face back to avoid exposure to hot steam or flare-ups.

  • Keep the water pan filled with water at all times. When filling be careful not to spill any of the water into the electrical element.

  • Keep the smoker unplugged when not in use.

  • Do not add lighter fluid, charcoal, fuel or any other material besides flavored wood to the base pan.
