  • Head of lettuce
  • Two tomatoes
  • Cucumber
  • 1/2 cup extra virgin olive oil
  • 1/2 cup balsamic vinegar
  • 1 cup shredded mozzarella cheese
  • Sharp knife
  • Large bowl for serving
  • Small bowl for dressing
  • Fork or small whisk
  • Kitchen towel

Instructions

      Wash the lettuce and cut into shreds. Pat the shredded lettuce dry with a towel to keep excess moisture out of your salad.

      Wash the cucumber and slice into thin rounds, then chop the rounds into medium-sized chunks.

      Wash the tomato and cut into small diced pieces. Be sure to remove the seeds and pulp as you go so your salad will not get soggy.

      Combine the olive oil and balsamic vinegar in the small bowl and whisk together until well blended.

      Place the shredded lettuce in the large bowl, separating and fluffing the shreds with your hands.

      Add the cucumber, tomato and shredded cheese.

      Add the dressing and blend by tossing the mixture until thoroughly coated. Serve immediately.

Tips & Warnings

  • If lettuce isn't to your liking, try substituting other leafy greens like iceberg lettuce, mixed greens, radicchio, bibb and spinach.

  • For extra protein or to turn your salad into a complete meal, add grilled chicken or grilled tofu to your salad.

  • Cucumbers tend to get soggy quickly, so be sure to prepare this salad the same day you intend to serve it.

  • For extra flavor, add dried cherries, walnuts or sunflower seeds to your salad.
