How to Make Chocolate Strawberry Cupcakes with Mocha Frosting

When you need to bring something to potluck or you just want to whip up some cupcakes, these are the ones to try. They are easy to make and do not take a lot of time. Also, when people eat them, they get the surprise of the cupcakes filled with strawberry jelly. The strawberry jelly and chocolate chip cake batter complement the mocha frosting. Things You'll Need

  • 12-cup muffin pan
  • Cooking spray
  • Large mixing bowl
  • 1 1/2 cups flour
  • 4 tablespoons sugar
  • 4 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 egg whites
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1 cup semisweet chocolate chips
  • 12 teaspoons strawberry preserves
  • Small mixing bowl
  • Spatula
  • 1 3/4 cup powdered sugar
  • 1 tablespoon cocoa powder
  • 2 tablespoons cold brewed coffee
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla

Instructions

    • 1

      Preheat the oven to 350 degrees Fahrenheit. Spray the muffin cups with cooking spray.

      In the large mixing bowl, stir together the flour, sugar, brown sugar, baking powder, salt, egg whites, milk and melted butter until smooth.

      Stir in the semisweet chocolate chips.

      Place 1 tablespoon of the batter into the bottom of each muffin cup.

      Top the batter in the muffin cups with 1 teaspoon of the strawberry preserves.

      Pour the remaining batter on top of the strawberry preserves, filling each muffin cup 3/4 full.

      Bake for 20 to 25 minutes or until a toothpick inserted into the center of one cupcake comes out clean.

      Remove the cupcakes from the pan, set them on a tray and allow them to cool.

    Mocha Frosting

      In the small mixing bowl, stir together the powdered sugar, cocoa powder, coffee, 1 tablespoon butter and vanilla until smooth.

      Let the frosting sit about 10 minutes or until it thickens.

      Spread 2 tablespoons of the frosting on top of each cupcake with the spatula. Any leftover frosting can also be placed on the cupcakes.
