Pan frying a juicy steak at home makes for a delicious entree, but cooking the meat just right may take some practice. Frying steak requires heating a pan to a high temperature and monitoring the steak carefully so that the meat does not overcook and burn. Having a digital meat thermometer on hand will help you to know when your steaks are done to your liking. Accompany your steak with roasted vegetables and red wine for a special dinner.       Take the steaks out of the refrigerator, cover with a dish towel and allow them to sit for two hours before cooking so that they reach room temperature. This will ensure that the meat cooks evenly.

      Apply a dry rub to the steaks. Keep it simple by using seasonings such as sea salt, black pepper, garlic and dried onion.

      Rub the steaks with butter or olive oil on both sides.

      Preheat a frying pan over medium heat, then melt a tablespoon of butter in the skillet if desired.

      Lay steaks in the center of the skillet and do not move them for 4 minutes. When the sides of the steak begin to turn brown, inspect the bottom of the steak. Flip the steak if it is dark brown.

      Brown the other side of the steak for about 5 minutes.

      Check the internal temperature of the steak with a meat thermometer. The temperature should read 120 to 125 degrees Fahrenheit for rare steak, 140 to 150 degrees for medium and 160 to 170 degrees for steak that is well done.

      Let the steaks rest when they have finished cooking. This will allow time for the juices to redistribute among the meat.

Tips & Warnings

  • You may also brown both sides of the steak in the pan and finish it in a 450 degree oven until it has reached your desired temperature or doneness. This ensures that the steak will not burn in the frying pan.
