    • 2

Set the wood chips on the lava rock around the smoker's heating element.

    • 3

Put the empty water pan in the body of the smoker so it rests on the lower support brackets. Be sure the pan's rim rests on the three notched out steps of the support brackets.

    • 4

Put the body of the smoker on the base pan while making sure the water pan stays in place.

    • 5

Fill the water pan with water or marinade. Do not fill the pan past the indicator line.

    • 6

Put the smoker's cooking grill above the water pan on the lower support brackets.

    • 7

Put the meat on the grill top so that none of the pieces are touching.

    • 8

Place the other cooking grill on the smokers upper supports. If you need more room for grilling, you can use this upper support.

    • 9

Place the dome lid back on the smoker and plug the smoker's power cable into an open electrical outlet.

    • 10

Check the smoker's water level after two to three hours of grilling time. Carefully refill the water pan if needed by lifting the dome lid, moving the meat aside and carefully pouring water down to the water pan.

      Unplug the smoker when finished.
