Cake and ice cream are a favorite birthday party pairing. Rather than serving a piece of cake a la mode, combine the flavors of cake batter into an ice cream base. The result will be your very own version of cake batter ice cream sold in ice cream shops. Use a boxed cake mix to save time and effort in this recipe. Does this Spark an idea?

Things You'll Need

  • 4 cups half and half
  • 1/4 cup sugar
  • 3 egg yolks
  • 1 cup boxed white or yellow cake mix
  • Small saucepan
  • Whisk
  • Candy thermometer
  • 1 tsp. vanilla extract
  • Resealable container
  • Ice cream freezer
  • Ice cream scoop
  • Multi-colored candy sprinkles

Instructions

    • 1

      Whisk together the half and half, sugar, egg yolks and cake mix in a small saucepan.

      Clip a candy thermometer to the side of the pan so the tip is in the ice cream base but not touching the bottom or sides of the saucepan.

      Bring the mixture to 160 degrees Fahrenheit over medium low heat, whisking the entire time.

      Remove the ice cream mixture from the heat and add the vanilla extract.

      Transfer the mixture to a resealable container.

      Chill the ice cream mixture for two hours up to overnight in the refrigerator.

      Pour the chilled mixture into the drum of an ice cream maker.

      Freeze the ice cream according to the manufacturer's instructions for your ice cream maker model.

      Chill the finished ice cream in the freezer for another 30 minutes to firm the ice cream for scooping.

      Scoop out the ice cream into serving bowls with an ice cream scoop.

      Garnish the ice cream scoops with candy sprinkles on top.
