A portable roasting oven is an effective appliance that can prepare many different food items. It can serve as an auxiliary cooking appliance when other food items in an oven. The 18 qt. NESCO roaster is large enough to make meals for large groups. It also has automatic temperature control and a red signal light to indicate it is operating.

- Dishwashing detergent
Place the roaster oven on a counter top surface where it's close to an outlet.
Remove the cookwell liner from the roaster and set it aside. Keep the lid off the roaster. If this is the first time you're using it, use dishwashing detergent to wash the roaster cover, the cookwell and rack. Plug in the roaster and set the temperature to 450 degrees Fahrenheit. Let it run for one hour to remove any remaining odors from the heating element. Turn the heat down and unplug the roaster after the time elapses.
Fit the cookwell liner into the heatwell of the roaster.
Set a temperature to preheat the oven and place the lid on the roaster. When the red light turns off, the roaster is ready to cook something.
Place the metal rack into the cookwell to roast meats above the cooking juices.
Place food into the cookwell and cover the roaster. Cook the food for the time specified in the recipe. Check on the food occasionally to prevent burning. Stir soups or stews occasionally.
Turn the temperature dial all the way to the left after the foods finish cooking and unplug the unit.
Allow the roaster and all parts to cool, then remove the cookwell from the heatwell. Wash the cookwell and the rack either by hand or in the dishwasher. Wash the cover of the roaster by hand.
Tips & Warnings
- Do not use the metal rack to cook soups, stews or casseroles.
- Do not scrub or scour the surfaces of the cookwell or heatwell.
- To prevent steam burns, tilt the lid away from you when you remove the cover of the roaster.
- Do not touch the outer body of the roaster while it's in operation. Use hot pads or touch only the handles of the roaster.
- Never immerse the heatwell portion of the roaster in water.
