How to Use a Mirro 22 Quart Pressure Canner
Pressure canners differ from pressure cookers in that you can use the canner to preserve foods in glass canning jars for future use. Because the Mirro 22 quart canner has three different pressure gauges, instead of the single gauge used in the cooker, the canner can reach the pressure recommended by the U. S. Department of Agriculture. Pressure cookers should never be used for canning. Does this Spark an idea?
Things You'll Need
- Canning jars, lids and rings
- Vinegar
- Canning funnel
- Prepared vegetables or meats
- Paper towels
- List of food canning times
- Canning tongs

Wash and rinse all canning jars, lids and rings.

Place 2 quarts of water and 1 tbsp. vinegar in the canner. Place the canning rack on the bottom of the canner pot.

Fill the canning jars, using a funnel in the opening of the jar, with prepared foods to be canned. Wipe the top of each jar with a paper towel and cover with a canning lid. Secure the lid with a canning ring. Repeat for the remaining jars.

Place the jars into the canner. If canning half-pint or pint jars, use the second rack on top of the first level of jars and add more jars to the canner.

Secure the lid of the Mirro canner in place by lining up the arrows on the lid and pot and twisting clockwise until the lid locks into place.

Place the canner on the stove and heat on high heat until steam escapes from the vent tube of the lid for 10 minutes.

Place the pressure gauge on the vent tube using hot pads. In most cases, the gauge used will be marked 10 lbs.

Continue to heat on high until the gauge begins to jiggle quickly on the tube. Turn the heat down until the gauge jiggles less vigorously.

Process the food according to the canning time instructions, starting the timing from the first jiggle of the gauge.

Remove the canner from the heat after the processing time and allow to cool naturally until the canner lid can be opened without using force.

Remove the jars from the canner using canning tongs, as they will still be very hot.

There are a number of books available that explain the canning process in detail. The Ball Blue Book of Canning and Preserving Recipes is available inexpensively anywhere canning supplies are sold. Other books, such as Stocking Up or Putting Food By can be found in bookstores or online.
When canning mixed recipes, such as soups, process the jars for the longest recipe ingredient. For instance, meats are processed for 75 to 90 minutes, while vegetables are processed for between 20 and 40 minutes. If you have a combination of meat and vegetables, you would use the longer processing time.
The Mirro 22 qt. pressure canner will hold up to 36 half-pint jars, 20 pint jars and seven quart jars.
