For some families, eating pork and sauerkraut on New Year's Day is a tradition, especially for the Pennsylvania Dutch. When eaten on New Year's Day, pork and sauerkraut are supposed to bring good luck. The sauerkraut can either be canned or bagged and the pork can be a pork shoulder or roast. The dish is often accompanied by mashed potatoes and eaten for lunch or dinner by the entire family. Does this Spark an idea?

Things You'll Need

  • Pork loin roast
  • Sauerkraut
  • Salt
  • Pepper
  • 1 tsp. caraway seeds
  • Crock pot
  • 1 tbsp. butter

      Figure out how many people you are going to feed. Buy 1 pound pork roast and 2 cups of sauerkraut for every six people. If you have less than six people, plan on having leftovers. Make sure you have a crock pot big enough to hold everything, or purchase a new one.

      Put the pork loin in the crock pot. If it doesn't fit, cut it in half or thirds and then place it in the crock pot. Season the pork loin by sprinkling 1 tsp. of caraway seeds and a pinch of salt and pepper over the roast.

      Place the sauerkraut and the juice from the sauerkraut on top of the roast.

      Melt 1 tbsp. of butter in the microwave, and drizzle it over the sauerkraut and roast.

      Cook the roast for about 8 hours on low. Use a meat thermometer to make sure the roast reaches 160 degrees internally.

Tips & Warnings

  • Undercooked pork can be dangerous and make you sick. Make sure the roast is cooked properly.
