How to Use Green Stevia Powder

Stevia is a shrub-like plant native to South America. When its leaves are dried and ground, stevia looks like a green powder and can be used as a sweetener. You can substitute stevia for sugar in most recipes, except recipes that call for properties of sugar such as caramelization. Stevia is much sweeter than sugar, so you will use less of it in recipes.       Determine the conversion of sugar to stevia you will need for your recipe. A measurement of 2 tbsp. of dried stevia powder is equivalent to 1 cup of sugar. Using the same amount of stevia you would for sugar will result in an overly sweet dish.

      Sift the green stevia powder in with the dry ingredients if you are baking or add the amount of stevia required where your recipe calls for sugar.

      Add bulk to your recipe. Because you will be using less stevia than you would sugar, you will need to add a bit of another ingredient to the recipe. In baking, you can use applesauce to add bulk; in cooking, you can use fruit juice or yogurt.

      Bake or cook your dish as the recipe calls for; the recipe will taste the same using stevia as it would using sugar.
